Ingredients:
- 3 teaspoons carrot, grated
- 2 teaspoons zucchini, cubed
- 1 egg
- A pinch of nutmeg powder
- Oregano leaves, to taste
- Garlic powder, optional
Directions:
- In a small bowl, beat the egg with a fork
- Add the remaining ingredients and mix well.
- Heat some olive oil in a non stick pan, pour in the egg mixture and cook over low heat until the veggies soften and the egg is completely cooked.
- Cool down and serve fresh!
