# Apple Coconut Truffle

Ingredients:

3 medium apples, peeled & grated

1 cup coconut milk

1 cup unsweetened shredded coconut

1 tbsp cinnamon powder

1 clove, to taste

Directions:

1. In a medium non stick pan, heat the apples, cinnamon powder, clove and coconut milk mixture on medium heat for approx 20 minutes.

2. Stir the mixture regularly until the dough thickens up a bit.

3. Remove the clove and blend everything together in a processor.

4. Mix shredded coconut to this mixture to thicken it up.

5. Prepare a greased plate (with olive oil) and spread the mixture thinly on this plate. Allow it to cool for one hour in the fridge.

6. Roll the dough into small bowls and roll in shredded coconut until fully covered.

7. Store in the fridge another hour before serving it to the baby.

# Applesauce

Ingredients:

3-4 apples, grated

1/2 tsp cinnamon

2 cups water

Directions:

1. Heat a nonstick pan and add all ingredients to it

2. Cover the pan and bring it to a light simmer.. Simmer for 30 minutes, until apples are completely cooked and water is well absorbed by the apples.

3. Once slightly cooled, blend the mixture to a finer consistency and serve fresh to the baby.

# Baby pumpkin pie 🥧

Ingredients:

1/2 cup fresh pumpkin puree

1/4 cup Greek yoghurt

1/4 teaspoon cinnamon

1 tablespoon prunes paste (or date paste)

Directions:

Place all ingredients in a small bowl and mix well. Serve directly to the baby, fresh.

# Chia Pudding

Ingredients:

  • 1/2 cup coconut milk or oat milk
  • 3 tablespoon chia seeds
  • 2 tablespoons raisins
  • 1 tablespoon shredded coconut
  • Chopped fruit of choice for topping

Directions:

  1. Soak the raisins in water for 30 minutes.
  2. Blend the soaked raisins and milk in a blender.
  3. Pour the mixture in a bowl and add chia seeds and shredded coconut to it. Mix well.
  4. Refrigerate for 3 hours and add chopped fruits before serving to the baby.
